Salmon With Tarragon Sauce

This is a quick fix on a busy work night. Actually very few of my recipes — or at least the ones I use all the time — require much more than half an hour from start to finish. Hey, I’m usually hungry when I get home from work. I don’t want to wait around to eat! I serve this with rice pilaf and some steamed fresh veggies (carrots or squash usually) or a salad.

Salmon With Tarragon Sauce

4 tbs. butter
1-1/2 lb. salmon fillet
Salt to taste
1/4 cup dry white wine
1/2 tsp. dried tarragon
4 tsp. Dijon mustard

Heat oven to 400 degrees F. Melt 2 tbs. butter in a roasting pan large enough to hold the fish. Put the salmon in the butter and turn to coat. Sprinkle with salt. Bake 20 minutes, turning once. Combine wine, tarragon, and mustard in a small saucepan. Bring to a boil over medium heat and simmer 2 minutes. Remove and stir in remaining 2 tbs. butter. Cut the fish into four serving pieces and top with the sauce.
