1/2 c. (1 stick) butter
1 c. flour
2 eggs, slightly beaten
2 tbs. lemon juice and bit of grated lemon rind
1/2 tsp. baking powder
1 c. sugar
2 tbs. flour
1/4 c. confectioner’s sugar
Crust: Combine butter and flour and cut fine with pastry blender. Pour into 9-inch square baking pan. Press into bottom of pan until spread flat. Bake at 350 degrees F. for 15 minutes. It should not be brown.
Filling: Mix eggs, lemon juice and rind, baking powder, sugar and flour and pour over baked crust. Bake at 250 degrees F. for 25 minutes. Dust top with confectioner’s sugar and cut into squares or bars.
