Diann Gordon’s Pumpkin Bread

Our former legal assistant made this delicious bread and brought it to work for a taste. I loved it so much that when my birthday came around, and she asked me what kind of cake I wanted, I insisted I’d rather have the pumpkin bread. In the middle of July. It’s just THAT good.

Pumpkin Bread

2/3 cup water
1 cup vegetable oil
4 eggs
1 (16-oz.) can pumpkin
3 cups sugar
3-1/3 cups flour
2 teaspoons baking soda
1-1/2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon vanilla extract

Preheat oven to 350 degrees F. Grease and flour loaf pans. Mix water, oil, eggs, pumpkin, and sugar. Blend well; add remaining ingredients. Pour into prepared pans. Bake for 1 hour. Remove from pans to cool.
