Comfort Me

Now Da Goddess has gone and done it. I’m facing the prospect of iced tea, cheese doodles and leftover sausage pizza for lunch and she goes and ponders about comfort food!

Well, mine has to be, hands down, something that Robert does really well. A grilled rib eye, which he cooks to perfection — nice and pink inside (please, no groans or snarky comments!). And mashed potatoes. He makes them with sour cream whipped in along with just a dash of milk, butter and paprika. And a garden salad with my favorite dressing, Marie’s Cilantro Garlic, which you should be able to find in the produce section of your grocer.

We like to follow that with my chocolate cheese pie [recipe below]. And of course, we usually do this (“steak night”) on Fridays so we can watch a rented video or DVD while we eat. Damn, I’m hungry. And I wish it was Friday!

Joanie, don’t be surprised when a bunch of people pull up in your driveway tonight around supper time. (If I leave now, I can be there on Monday afternoon!)

Chocolate Cheese Pie

Chocolate Graham Crust (I use Keebler)
1 (6 oz.) pkg. semisweet chocolate chips
1 (8 oz.) pkg. cream cheese, softened
1/2 cup light brown sugar, firmly packed
1/8 tsp. salt
1 tsp. vanilla
2 eggs, separated
1 cup heavy cream, whipped
1/4 cup light brown sugar, firmly packed

Melt chocolate over hot (not boiling) water; cool about 10 minutes. Blend cream cheese, 1/2 cup brown sugar, salt and vanilla in bowl. Beat in egg yolks, one at a time, until thoroughly blended. Beat in cooled chocolate, blending well.

In a chilled bowl, beat eggs whites until stiff but not dry. Gradually beat in 1/4 cup brown sugar, beating until stiff and glossy. Gently but thoroughly fold chocolate mixture into egg white mixture. Fold in whipped cream.

Chill overnight (if you can wait that long!). We don’t usually!
